Simplify workload names

Rename the following workloads to make the names shorter and easier to understand:

• otelcol-events => events
• otelcol-logs => logs-metadata
• otelcol-logs-collector => logs-collector
• otelcol-metrics => metrics-metadata

I would also vote for dropping the sumologic part that's hardcoded in workload names, as the Helm release name should be enough. But this is probably more controversial, so let's at least do the basic thing and drop the otelcol part.

Moving this to v5, as it has unknown and potentially significant consequences for both customer content and Sumo Apps. Needs more investigation.
