Belgian Liege Waffles

Ingredients

  • 375g Pastry flour (750g)

  • 135g Warm milk (270g)

  • 35g fresh yeast (70g)

  • 2 eggs

  • Vanilla sugar

  • Salt

  • 200g butter room temp (400g)

  • 250g sugar (500g)

Prepare dough

  • Mix flour, milk, yeast, eggs, vanilla, salt.
  • Rest 30 minutes.
  • Work butter and pearl sugar into dough.
  • Portion into 100-125g.
  • Rest 15 minutes.
