If I log in with either the wrong org, or want to install into multiple orgs at once, I can't logout. I'd like to have the ability to logout to choose a new org to log into.

The workaround at the moment, would be to close and restart your browser, i know thats not ideal.

Spent a couple of hours looking into this, the /logout URL should work, however looks like a bug/known issue in the Salesforce Spring framework from what my debugging has discovered. Going to move onto something else for now, i'll reach out to some of the devs to see if this is actually possible. I also noticed that https://github.com/forcedotcom/java-sdk is no longer maintained and suggests wsc, however this doesn't appear to have the Spring Framework integration. So i may have to look to move the architecture of this tool to another container to solve this eventually...

I ran into this issue as well. The /logout url worked perfectly for me. Can we perhaps, (one day long after Dreamforce is over ) convert this issue to an enhancement to add a "Logout" button to the UI?
