Provide an option to block metrics collection

Tell us about the problem you're trying to solve

AirByte exports metrics data without clear explanation, There is no clear way to disable the feature from UI / configuration.
The configuration console only provide an option to anonymize the data.
The exact data which is collected and how it is anonymized is not described in the docs.

Describe the solution you’d like

Provide users the ability to turn off the metrics collection via configuration.
I would prefer that it would be off by default but I can understand wanted to keep it on by default.

Describe the alternative you’ve considered or used

An alternative approach is to block all communication between the local airbyte instance and airbyte servers.

Hi @kfir-lago! Thank you for opening this issue! We'll work on making this clearer. In the meantime, you're able to control this via environment variable. You can set:

TRACKING_STRATEGY=logging in your .env file to disable any communication between local Airbyte instances and Airbyte servers.
