Documentation Request

I would really appreciate some documentation for how we should use this awesome plugin with localstack to provide a proper local dev experience that matches production aws.

From what I can tell after having a bash locally the plugin isnt natively capable of handling this and would require the ability to configure the endpoint where it should be running its scripts against be made configurable but I could be totally wrong! Send help!

This currently means deciding between localstack or serverless-domain-manager, both really powerful tools but localstack is giving me test assurance. Would love to see this working together. Is there any work spec'd out for this or what needs to be done? I'd be happy to give it a go.
