Implement a better "schema" for easily mapping logical columns to CF columns (blob1, blob2, etc.)

There's a basic mapping here, but if you look around the code you'll see there's hardcoded columns being used.

There should be a consistent, safe way of mapping columns to CF Analytics Engine columns and the other way around.
