Link to the portion of the docs that is out of date
All over the place but specifically in administration/customize

Describe what you believe the correct version should be
On BBB 3.0 we drop Kurento, we're left with mediasoup.

Additional context
I dropped a couple sections in #20208 but for most of the rest I would appreciate @prlanzarin 's help.
