pandoc/extra will include Eisvogel as well as all LaTeX packages needed

from Wandmalfarbe/pandoc-latex-template#354 (comment): docker run --rm --volume "pwd:/data" --user id -u:id -g pandoc/extra input.md -o output.pdf --template eisvogel should do the trick :)
