Is there a post-parse Hook?

Is there a trait I can implement, something like post_parse(&mut self) where I could calculate additional struct field values that do not come from the command line? Or where I could run post-parse validation code?

There is not. We've talked about adding some more extensibility to clap (#3476) but that would be more for reusable units of validation, rather than one-off validation. imo a trait would overcomplicate this when the caller can just do processing after the parsing is done.
