It would be great to be able to retain some image metadata (specifically copyright/creator/contact/url/etc in the case of photographer portfolio images). Is this option already available? Or is a custom adapter necessary?

The option exists within Sharp (sharp docs - withmetadata), but I haven't figured out how to access it.
