Describe the feature you'd like
I want a way to check if the loaded at field for dbt source freshness is valid. I just had a developer put in

loaded_at_field: "CAST(non_existent_column AS TIMESTAMP)"

That reviewers and CI didn't catch.

Additional context
If anyone has any ideas how best to do this, I'm happy to put in a PR.
