Swap ad-hoc imgs for EUIIcons in Detail Drawer and Config View sub-components

Per the recommendation here from #18597 we should avoid unnecessary use of bare img tags when a EuiIcon would be a viable option. This is to track the need for an update to the components added and edited in #18597, to be completed among its follow-up PRs.
