Easy way to change default.json within kibana src?

Perhaps create a script that uses the kibana submodule to run grunt build into an outer level folder. And make modifications to the outer level folder, (i.e. change default.json) from there?

For now I just converted the submodule into a folder in my fork: https://github.com/alpaca/kibana/commits/master to make modifications.

Curious if there's a better solution.
