Remove all extraneous options for server creation

For consistency, removing all of the extra options for server configuration apart from a consistent base set. This will be breaking, but will help users in the long run (and us!).

Todo:

• make implementations consistent across the board
• provide examples of the existing variations in the docs
• Make the explanation of the thinking for this simplicity more prominent
