We need to create some examples of using go-witness as a library. These examples should show the generation and signing of attestations by using the library directly versus using the CLI.

Hey @mikhailswift 👋 Would this make more sense in the go-witness repository? I am looking to propose removing the contents of https://github.com/in-toto/go-witness/blob/main/README.md for only information about go-witness, so maybe it could go there?
