PHP 8.0 has end of life November 2023.

Describe the desired solution

We should consider upgrading our workflows (and packages) to PHP 8.1 - active support November 2023 and security support November 2024.

Describe the alternatives that you have considered

We could also consider directly moving to PHP 8.2 min. But first we would need to check the active WordPress support of PHP 8.1 and 8.2 to ensure that we're good to go.
