It would be nice to have a way to convert unicode accented characters to latex accents when saving a file in bibtex format.

I was rather hoping that most programs can display and work with unicode fine by now. Do you work with programs that require single byte characters? Or is there another reason why you would need this?

In any case, we'd need something like the reverse of latex-decode (i.e., latex-encode) -- haven't checked if a Gem for this exists already -- then it would be relatively easy to add.

Generally, it is not recommended to use unicode in bibtex entries because they will not alphabetize correctly:

Also, most latex installation require including a package to handle unicode. I would like to provide bibtex files that can easily be used out of the box.

By the way, if your files are already correct, you can just disable the latex filter and bibtex-ruby will not convert anything to Unicode. If your input contains Unicode, like I said, we'll need the reverse of latex-decode.
