Enhancement description
Can Opensearch install the Phonetic Analysis by default please? It comes installed by default in AWS along with some other plugins. Elasticsearch on localstack installs it by default too.
Based on the description of this PR, there was a concern about size if we were to add all of the default plugins. In my opinion, it would be better for the localstack instance to mimic the default plugin list in AWS, especially if that is the behavior with Elasticsearch. But I will be happy to just get this one plugin.
Alternatively, if we could set the desired default plugins via an env variable, that would be great. But I am sure that would be more expensive to implement.

One common scenario using Opensearch with localstack is to populate it with data to test against. Most people use Elastic Dump to quickly populate OS\ES with indexes that exist somewhere else (like a CI or production environment). This doesn't work if some of the plugins are missing. In my specific case, it's only the phonetic plugin that blocks me from using elastic dump.
