How can I specify the Tag when using the emacs-unstable attribute?

From the description, this overlay provides a version where the attribute is named emacs-unstable: this is built from the latest tag, but is there any way to specify a specific tag?

I think this would be helpful in having a known working emacs that can be referenced, if something breaks;)

Is that somehow possible?;)
