Record and intercept at the same time

I'm trying to implement partial recording that only records nocks for new or changed requests. As a first step, I'm trying to get interceptors and recording working at the same time. I have code that looks roughly like this:

nock.recorder.rec({
  dont_print: true,
  output_objects: true,
});

const interceptor = nock(/.*/).persist();
interceptor
  .intercept(/.*/, 'GET')
  .reply(async function reply(uri, body) {
    console.log('intercepted uri', uri);
  });

I know that the interceptor won't do anything useful at the moment; I'm just trying to make sure it's executed so that I can override behavior for some requests. However, I never see intercepted uri logged, so as far as I can tell, my interceptor isn't actually running.

Does nock support adding custom interceptors while recording is active? If so, how can I do that? If not, I'd be willing to open a PR if I could get some guidance on an approach.
