Adding some info from https://jekyllrb.com/docs/ to the readme

e.g.

Jekyll requires the following:
Ruby version 2.5.0 or higher
RubyGems
GCC and Make

@babybeans if you want to improve the readme installation guide then going through the process and documenting step by step is useful :)
