Metric request: elasticsearch_data_stream_maximum_timestamp

Hi. It would be really helpful if we can have a metric with the timestamp of our datastreams.
It will be similar as elasticsearch_data_stream_store_size_bytes but returning the "maximum_timestamp" field.

That will allow us to detect if our datastreams have not received data in a particular timeframe.
