v2.7.0b1 Release Prep

Tasks / issues to be completed before the 2.7.0 beta release:

• Enum validation performance improvements (@samuelcolvin)
• cow string improvements in jiter
• New pydantic-core release (with 🚀 awesome ⭐ pyo3 changes)
• New jiter release
• Add test for RecursionError when serialising to JSON with computed field #9015 in pydantic
• create_model fails to use type annotation of typing.Annotated #8534
• Cannot use built-in callable as argument to PlainSerializer #8967
• Mypy type checking not working properly for classes that inherit properties after v2.6.4 #9007
• Add enum and type to the JSON schema for single item literals #8944
• It is possible to instantiate model with model_config field without exceptions #8469
• New speedate release

Not everything in the 2.7.0 milestone will be completed in time for the release. We've already added an abundance of new features and fixes, so we've decided to go ahead and get those things out. Much of what was not addressed in the 2.7.0 milestone will be rolled over into the 2.8.0 milestone :).

Note, we're shooting for a v2.7.0b1 release around March 20th, and the 2.7.0 release on the 27th.

Update, based on the current status of our TODOs - we're looking at releasing v2.7.0b1 by the end of March, hopefully next week :)

Closing for now - we've addressed all of these issues. We're on target for a release late this week (or early next) :).
