Haven't tried it myself but the XeLaTeX format should prolly work. Refer to this

In overleaf,first add the package \usepackage[UTF8]{ctex} and then set compiler as XeLatex in the Menu.

I had tried this approach, but it didn't wok. Is anyone know how to switch it into Chinese.
