Description
EVENT_MAX_SIZE_IN_KB config is not working for soketi from docker

Reproduction steps
Steps to reproduce the behavior:

  1. docker run --rm -e SOKETI_DEBUG=1 -e EVENT_MAX_SIZE_IN_KB=1024 quay.io/soketi/soketi:1.0-16-debian

Expected behavior
in console, there should be
maxEventPayloadInKb: 1024
