Custom parsing

I have such a json response :

I need to parse it into this class:

@JsonClass(generateAdapter = true)
class TestClass(
    val lastUpdateId: Long = -1,

    val coins: List<Coin> = listOf()
)

Where Coin is my class with custom logic.
How to do it using Moshi ?
