Investigate whether null-vs-absence is being fully respected in Kotlin adapters

I've seen some cases where this doesn't seem to be fully working as expected, let's try to beef up this test area and see if anything is missing.

The ideal test would be something that contains a default value but receives an explicit null for the value, which should be an error and not use the default value
