"checks" option isn't supported by VC API

The test suite is sending a "checks" option:

But this isn't supported in the API:
https://github.com/w3c-ccg/vc-api/blob/main/components/VerifyOptions.yml#L19

Therefore we removed it from the VC API test suite recently:
w3c-ccg/vc-api-test-suite#9
