Merging this would be really nice. I'm failing to install ex_prom currently, because of minor version restrictions for cowboy and finch

prom_ex is a really impressive library, but such version restrictions force me to use my own fork.

FWIW, we ended up using telemetry + telemetry_metrics + telemetry_metrics_prometheus combination instead of prom_ex
