Motivation
Test changes on a build with a simulated release and build, so that we can catch errors that are not detectable in a yarn workspace monorepo setup (See #2829 . In this way, we can prevent bad releases and avoid issues like #2883 in the future.
This CI job runs faster than the windows build job so it won't increase the total time for all CI checks to pass.
