Add how to collect enphase_envoy test fixtures.

Proposed change

When new features are requested or firmware is upgraded it can happen that existing test fixtures no longer cover all test cases and new ones are needed. HA PR home-assistant/core#116242 adds functionality to the enphase_envoy integration diagnostics report to collect the fixture data. This PR documents how to do this.
