Fixes #2598

Proposal

Allow up to 6 different colors for the response time chart, depending on how many stats are configured
Allow a maximum of 6 different percentiles to be configured for the modern UI
Update the docs to include the configuration for MODERN_UI_PERCENTILES_TO_CHART
