Upgrade next-transpile-modules in workspace examples

The latest major release of next-transpile-module (v3) changed the way the
module is used, see: https://github.com/martpie/next-transpile-modules/releases/tag/3.0.0

[vvo]

I got bitten by this because I installed the module in the terminal and then copy/pasted part of the example which failed.

There are other places where we use next-transpile-modules: https://github.com/zeit/next.js/search?q=%22next-transpile-modules%22&unscoped_q=%22next-transpile-modules%22 so I could also update them in the same PR if you want.
